Sorry, forget Categories, using wrong version, but would still like to 
know where to edit the Ticket Templates.

Having inserted some categories in picklist values for Faq Category.Â

These are not displaying in edit view of Faq and therefore unable to 
select anything other than General.

And, Please where do we edit the templates for Tickets as below:

    Ticket ID : 7172
    Ticket Title : Test Problem

    Dear Administrator ,

    The Ticket is replied the details are :

    Ticket No : TT1
    Status : Closed
    Category : Big Problem
    Severity : Major
    Priority : Normal

    Description :
    Test description

    Solution :
    Test solution

    Regards
