PS: Have anyone figured out how to created contacts from emails?

Ie., if the Mailmanager receives an email that should be assigned to a 
contact that does not exists, then vtiger should/could create the 
Contact and/or Organization?

    Yes. We modified vtiger 5.4 for a client so they could use webforms
    to create several modules.

    If you search back through this mailing lists archives around
    05/09/2012 you will find a discussion about making it work for
    multiple modules - it was pretty trivial IIRC.

    Not sure if it's the same for VT6 but it might help.
