Or a small "clear" button next to _every_ field in the mass edit display 
(like you see the the "x" button when editing a relation field); it 
could be used to empty a normal field, unset a checkbox and/or empty a 
relation field? Maybe it could appear when the field is hovered over or 
takes the focus?

That's quite a neat solution I reckon.
