You could try if Oauth2 for Gmail works for Exchange.

Dear members,

We have now enabled Google OAuth2 support for OutgoingServer, 
MailManager and MailConverter to latest master. (reference 
<https://code.vtiger.com/vtiger/vtigercrm/-/issues/1915>).

 1. Kindly go through oauth2callback/README.md for getting Google OAuth2
    setup.
  2.  To overcome the PHP IMAP XOAUTH2 limitation IMAP Proxy Tunnel
    service needs to be setup. You can find more details on the download
    here <https://code.vtiger.com/vtiger/vtigercrm/-/issues/1914>.
