In older vtiger systems if you set the generatedtype (in vtiger_field) 
of a date field to "2" it would always open empty in new records. I've 
not tried it in v7 but it worked in v5 & v6.

BUT - the Calendar module is a bit weird and proprietary compared to 
other modules so you might run into other issues such as the Javascript 
routines which expect there to be a date value so when you change one 
the other changes... You'll need to test thoroughly.
