But as per my requirement its not about a single field like status pick
list. Once Sales order is generated from quote and saved "it must be
freeze". It means that Order generated person might not have an edit option
again.

If i tried to give only read option to that user then it is not showing
"Generate Sales Order". So a record level privilege was needed.
