Nice.

I was thinking about the project last night and got to thinking this 
really needs a new sub-module of some kind where you (the admin or user 
with privileges) can create a block of Options (like adding new fields 
in the Layout Editor) and then tie this entity to one or more product 
ids. That way you can have as many different options as products if 
necessary.

Then the template and code that deals with the line item needs 
re-working to drag in the relevant data from the related Product Options 
when you choose a new product, or service, item.

Sounds easy ;-)
