Generally an RC release means that there are no outstanding issues.

The prosperous of an RC release is to increase the number of testers
to find new bugs.  If no further bugs are found in the RC release
becomes the final release.  If bugs are discovered then a new RC
release is created to test the bug fixes and that release becomes the
final release.

If everything you have planned for the 5.0 release is going to be
complete by July 5th then create an SVN branch for 5.0 to allow
changes targeted for 5.1 to continue and call the release 5.0-RC1.  If
not I think you would be better off calling it beta2.
