 Steps:

 1. Create a product with the '''Product & Service Taxes'''.

 2. Create a quote and associate above created product with this. Here you
 can see all the '''Product & Service Taxes''' and '''Shipping & Handling
 Taxes''' those are defined in that product.

 3. Save the quote. Now you can see the totals added with the both taxes.

 4. Now go to '''Settings > Tax Calculations''' and disable both '''Product
 & Service Taxes''' and '''Shipping & Handling Taxes'''.

 Now these taxes would not be available for newly creating product. But if
 you go to already created quote and look into the "Shipping & Handling
 Taxes", It will show 0 taxes in the details view. However the grand total
 would not get changed. But if you go with the edition it will overite all
 the shipping taxes as 0 and the total aslo changed. Kindly check this
 issue with SO and Invoice too.
