 If a user doesn't have permission to view the particular value of picklist
 field, then we will show   the label as '''Not Accessible'''. Once he
 change the value from '''Not Accessible''' to Some other value, then we
 will remove that '''Not Accessible''' label from the picklist values. This
 is happening correctly in the normal edit view. But not in Ajax edit.

 PS: Once you reload the current page, after ajax edit, then this problem
 will not occur.
