You can mark "Email Opt Out" for contact manually. They would not receive any mass email you try to send.

It is easy to make a opt out link with Workflow Designer, but you need to have your crm available outside the office. And WF Designer is commercial.

Or you can build your own handler to mark contacts who click the link as opted out.
