Well, displaytype 2 fields are supposed to be not-editable. So one could 
just as well argue that allowing a Workflow to edit the field is 
breaking the rules...

I do agree though, that it would be useful to have a way to specify how 
a field can be read-only. The difficulty however, is that there are 
potentially many ways to alter a field's value:

* Normal User interface
* Server API
* Webservices API
* Webform
* Mail Converter
* Customer portal
