I agree with your description of the UI, but it gets a little trickier
once you're under the hood.  Does each product type get its own custom
fields table?  What if two product types overlap fields partially?  I
think the standard one column per field model falls down here.  I
begin to sympathize with the creators of NoSQL.  ;)
