If I understand your question correctly (you want to have vtiger on a 
different machine to the one where asterisk runs) then yes, that is fine.

I have done some tests where the two machines are separated across the 
Internet and I run the AMI interface over a ssh tunnel (stunnel) between 
the two machines.
