Comment:

 Our observation (post 5.1.0-Validation build2)

 * Created "Test Product" with Qty in Stock: 5

 * Created SO for "Test Product" with Qty: 4

 * Converted SO to Invoice and Saved, "Test Product" Qty in Stock reduced
 to 1

 * Tried converting SO to Invoice again. Qty input shows 4 but with a
 warning (Stock is not enough)

 This is expected behavior, let me know if you observe something different.
