 There isn't any way to delete an item from the list after you have created
 the invoice, sales order or quote.  This would be a necessity if the
 customer decided not to carry out a particular item.

 It doesn't seem possible to add the same product twice.  Although it is
 much appreciated that a warning is displayed that a duplicated product
 exists, it would be possible for someone to order a particular product at
 one price and several more at another price.

 It should also be possible to override the price (perhpas with the right
 access level) while entering the invoice, sales order, or quote.
